To top it off, I’ve got a delicious recipe for expectant Black mothers. This Sweet Potato and Black Bean Enchilada Casserole is easy to make and packed with nutrients for you and your growing baby.
Ingredients:
– 2 medium sweet potatoes
– 1 can black beans
– 1 can enchilada sauce
– 1/2 cup shredded cheese of your choice
– 8 corn tortillas
Instructions:
1. Preheat your oven to 350 degrees.
2. Peel and dice your sweet potatoes, then boil them until they are soft.
3. Drain and rinse your black beans, then mix them in with the sweet potatoes.
4. Warm up your tortillas in the microwave or on the stove.
5. Pour a thin layer of enchilada sauce on the bottom of a casserole dish.
6. Place two of the tortillas on top of the sauce, then add half of the sweet potato and black bean mixture on top.
7. Repeat with two more tortillas and the rest of the mixture.
8. Place the last two tortillas on top, then pour the remaining enchilada sauce over everything.
9. Sprinkle your cheese on top.
10. Bake for 25-30 minutes or until the cheese is melted and bubbly.
